Bodegas Barbadillo was founded in 1821 and is based in Sanlúcar de Barrameda. The house has strong ties to the traditional production and ageing of sherry and utilises historic solera systems.
Cream Sherry is created by combining a drier sherry with a sweet component. At Barbadillo, Palomino Fina is used as the base for this, with Pedro Ximénez providing the sweetness. Barbadillo describes its Eva Cream, for example, as a blend of five-year-old Oloroso and five-year-old Pedro Ximénez.
A full-bodied, smooth and sweet sherry with a deep mahogany colour. On the nose, we find aromas of nuts, dried fruit, raisins and plums, complemented by notes of wood. On the palate, it is rich, smooth and almost creamy, with a lovely interplay between the drier Oloroso style and the sweet, raisin-like notes.

Ageing takes place in sherry casks using the traditional Criaderas y Solera system. A technical specification for Barbadillo Cream states approximately 3 years’ ageing, with oxidative ageing defining the wine’s character.

Delicious with chocolate, pastries, nuts, dried fruit, foie gras and blue cheeses. Also excellent served slightly chilled as a digestif.
