Bodegas Barbadillo is based in Sanlúcar de Barrameda and has been producing wines in Andalusia since 1821. The region is famous for its white albariza soils, which are closely linked to traditional sherry production.
100% Palomino Fina. Palomino is Barbadillo’s main grape variety for dry sherry styles such as Fino, Manzanilla, Amontillado, Oloroso and Palo Cortado.
This is a distinctly dry, fresh and refined sherry. On the palate, fresh citrus and green apple come to the fore, complemented by typical notes of fresh bread and brioche resulting from ageing under flor.
You can also expect the characteristic Fino notes of almond, yeast and a slightly salty touch.
Taste in brief: very dry – citrus – apple – almond – brioche – fresh
The Tradition Fino is aged for approximately 3 years in traditional sherry casks, under a natural layer of flor yeast. This is known as biological ageing.
The flor largely protects the wine from oxidation whilst simultaneously imparting the typical aromas of yeast, bread and brioche. This explains why a Fino remains so pale, fresh and dry despite its cask ageing.
Fino is an excellent aperitif wine, but also particularly well-suited to food. I would pair it with olives, almonds, tapas, Spanish ham, anchovies, shellfish, oysters, grilled fish and sushi. Its very dry and fresh style also works well with fried fish and other savoury snacks.
A classic dry Spanish sherry made from 100% Palomino Fina, produced by the historic Bodegas Barbadillo. Aged for approximately three years in sherry casks under a natural layer of flor. Very dry, fresh and refined, with aromas of citrus, green apple, almond, fresh bread and brioche. Light and elegant on the palate with a fresh, subtly salty and dry finish. Excellent as an aperitif and delicious with tapas, olives, Spanish ham, almonds, shellfish, fish and sushi. Serve well chilled at 6–8°C.
