A very rich, intensely sweet and velvety sherry with a deep mahogany colour. On the nose, raisins, prunes and chocolate dominate, complemented by notes of ripe dried fruit and fine oak. On the palate, it is full-bodied, syrupy and silky smooth, with a pronounced sweetness and an exceptionally long finish in which raisins and dried fruit are particularly prominent.
Flavour profile: raisins – plums – chocolate – intensely sweet – velvety smooth – rich
The Tradition Pedro Ximénez undergoes 5 years of oxidative cask ageing in traditional American oak sherry casks. The ageing takes place according to the Criaderas & Solera system in Sanlúcar de Barrameda.
This PX is almost a dessert in its own right. It pairs excellently with dark chocolate, chocolate desserts, vanilla ice cream, cheesecake and blue cheeses. Foie gras also makes for an interesting pairing, thanks to the contrast between richness, salt and sweetness.
A simple but particularly delicious combination is vanilla ice cream with a small amount of Pedro Ximénez drizzled over it.
A rich and intensely sweet sherry made from 100% Pedro Ximénez. After harvesting, the grapes are sun-dried to concentrate their natural sugars and aromas. The wine is then aged for 5 years in American oak sherry casks using the traditional Criaderas & Solera system. Deep mahogany colour with opulent aromas of raisins, prunes, chocolate and fine oak. Full-bodied, velvety smooth and almost syrupy on the palate, with intense sweetness and an exceptionally long finish. Delicious with chocolate, vanilla ice cream, cheesecake, blue cheeses and foie gras, or on its own as a dessert wine.
